How does a shut-off valve differ from a gate valve?

In the case of the valve, the flow changes direction inside the body (S-shaped channel), which gives greater hydraulic resistance, but compactness and reliable tightness. The gate valve is direct—flow, less hydraulically "noisy", but larger in size.

Is it possible to install the valve in any direction of flow?

No — most valves have a flow direction arrow on the body, you need to mount strictly according to it, otherwise the hegmeticity and sealing life decrease.

What material should I choose for drinking water?

For drinking water and food media, bronze or stainless steel is usually used — they do not taste and are resistant to corrosion, unlike conventional carbon steel.
